Having perfect, fluffy on the inside, crispy on the outside roast potatoes as part of your Christmas dinner will always go down a treat. In Ireland we are well known for our love of the humble potato and this admiration is taken to new heights at Christmas time when we pull out all the stops to display a fantastic variety of mashed, baked, boiled and roasted potato. As roasties are some of our favourites we have a tasty short recipe for you to try out.
- 1 kg spuds
- Sea salt
- 1 tablespoon of Olive oil
- 1 jar goose fat or duck fat
- 1 head garlic, unpeeled
- A few sprigs of thyme
HOW TO MAKE YOUR ROASTIES
Preheat the oven to 200’C/395’F/Gas Mark 6. Add the tray to the preheated oven.
Peel the spuds and roughly chop them into quarters. Cook in boiling salted water until part-cooked ( 8/10 minutes) but still holding their shape. Drain and put them back in the saucepan with lid on or a tea towel over the top to make them extra fluffy.
Add the tablespoon of olive oil and the goose fat to the oven baked tray to get it sizzling.
Drop in the unpeeled garlic and 3 – 4 teaspoons of salt.
Transfer the potatoes to the baking tray and spoon over a bit of the fat, then sprinkle with a teaspoon of salt and the springs of thyme scattered over the mixture.
The potatoes will sizzle when you add them to the oil. Roasting them for 1 hour until golden brown and crispy.
